I’ve been in a bit of a recipe rut of late, but our recent family holiday to the beautiful white island has proven a new source of food inspiration. Ibizan food it seems is having a moment in the sun, scuse the pun.
Round these parts, when illness strikes of the cold and flu variety, the first thing my mind turns to is soup. Nope, not chicken soup (though I am partial to a good chook broth) but aromatic, zingy, spicy Thai soups.
I think this might be my last proper recipe post and picture for a little while. Today I’m 40 weeks pregnant and as much as I’d like to think I’ll be able to have babyfruit in one arm and a wooden spoon/camera in another, I think it might take me a while to build up to that level of multitasking.
I love a crab cake, but they’re a little difficult to scoff at parties in polite company. For soirees one needs food that’s edible using just one hand, which is where the idea of these cute little crab pops came from.
The sweet potato is crammed full of nutrients as well as being high on the comfort scale. I like to roast it hasselback style, topped with chopped chillies, salt and fresh rosemary. Like this it’s the perfect side to steaks, stewed chicken or even a hearty slow cooked lamb shank.
Laksa, tom kha soup and the piña colada are just a few of my favourite coconutty things, and now the coconut is having its moment in fashion I get to scoff it in all manner of stuff from snack bars to juices, which pleases me no end.
